Ingredients
For peanut sauce
3 table spoon Chinese rice wine
3 table spoons soy sauce
3 tablespoons light soy sauce
3 tablespoons creamy peanut butter
3 tablespoons chunky peanut butter
1 tablespoon Asian Chile sauce
¾ tablespoon sesame oil
¾ cup vinegar
For Salad
6 oz lo Mein noodles
1 large carrot thinly sliced
3 ½ cup bean sprouts properly rinsed and dried
2 tablespoons toasted sesame seeds
1 skinned, boned, cooked and shredded chicken breast
2 green onions sliced
Preparation
For preparing peanut sauce blend thoroughly the soy sauce, light soy sauce, creamy and chunky peanut butters, vinegar, rice wine, Chile sauce and oil. 1 cup sauce will be needed for the salad.
Now for salad put noodles in the boiling water and cook as per package directions. Drain the water and let it cool. In a large bowl mix beans sprouts, green onions, sesame seeds, chilled noodles, chicken and carrots. Add peanut sauce to the mixture and toss. Mix it thoroughly.
