Deluxe Pork Chop Suey

Ingredients:

1 cup fresh lean pork
3 cups fresh bean sprouts
1/2 cup sliced water chestnuts
1/2 cup shredded bamboo shoots
1/2 cup sliced canned mushrooms/fresh mushrooms
3/4 cup sliced celery
1 tablespoon soy sauce
1 medium onion finely chopped
1 tablespoon corn starch -- dissolved in
1/3 cup water
2 tablespoons oil
Pepper and salt for seasoning

Method

Shred the pork into narrow strips and marinate pork and onion in soya sauce for 20 minutes. Cut all the other ingredients and keep them ready on a platter. Prepare cornstarch solution.
Place the wok on the stove top. Heat the oil, when the oil is heating turn the wok so that oil will cover maximum cooking surface.

Heat the oil till it smokes. Add marinated pork and onions and stir fry till the pork is brown. Cover the wok and let it cook further for 3 minutes or till the meat is thoroughly cooked. Remove the lid and add celery and bean sprouts. Mix it well and cook for further 2 minutes. Then add all the remaining ingredients, salt and pepper except cornstarch and blend it thoroughly. Cover it and cook further for 3 minutes.

After 3 minutes, add the cornstarch solution (no lumps) and turn of the heat. Stir the food and serve with rice.
