When you are planning for stir-fry, heat the wok at least for one or two minutes before putting oil and other ingredients. Oil which when put in the wok, swirl it around to coat the entire cooking surface. Prevent the food from burning by moving the food in between with the help of spatula or chopsticks. The food absorbs the heat and gets cooked within less time. But don’t clutter the wok with too much food because excess food cools off the heat and prevents it from browning and getting cooked evenly. To avoid this cook food in two, three steps like cooking meat first, remove it, cook vegetables and again return the meat to the wok.
