Oil used in Cooking Woks?

Every cooking utensil is different and need to follow some cooking techniques. This is same with the cooking woks. The food in the cooking woks is cooked on a very high heat and the food is cooked quickly. For this reason when the oil is used it should be able to resist high temperatures without smoking.

The oil you are using should not have strong flavor of its own like good blended vegetable oil, peanut oil, corn, soybean and safflower oil. But if you want to have the flavor of oil in your dish you can use toasted sesame oil, it has strong distinctive flavors that goes well with the Oriental vegetables.

Other oils like, olive oil or butter is strictly not used for wok cooking as they burn very easily and produce undesirable smoke. While adding oil to wok one should be very careful as it is added when the wok is hot.
