Many people were of the opinion that wok was used only for stir frying, this was true earlier but now we find different types of cooking techniques that are performed in one single wok. Every cooking technique adopted has given best results. The different techniques are the age old stir frying, deep frying, steaming, red cooking, braising and stewing.
Stir Frying: In this process the vegetables are cooked at very high heat with little oil. In this process the food is stirred continuously and cooked within no time.
Deep Frying: The deep frying in wok is done with less oil. The food to be fried is marinated with soy sauce and other spices and sometimes it is coated in a batter of cornstarch and egg white. In this process the food is fried till it is almost cooked.
Steaming: Steaming is done with the help of bamboo basket which is put in the wok to steam food that require more time for cooking.
Red Cooking: When food with large pieces is slowly cooked in dark soy sauce, this process is known as the Red Cooking. The food cooks as long as four hours.
Other methods of wok cooking are Sautéing, Braising and simmering
